Our focus on healthy habits is taking shape. We’ve trained our taste buds to crave healthier choices and are now seeing noticeable changes in our eating preferences. But...we are still struggling with that need for something sweet. Anyone else think about just a little something sweet for after a meal or for a mid-day snack?
Limiting sweet treats & desserts can be difficult. Yes, we know they are sometimes foods, but what happens when you need something sweet more than once a week?
Enter, dates. On the outside they don’t really give you that WOW factor. Okay, it might be more of a What? factor. We know.
Don’t let that stop you from loving them. Dates are high in dietary fiber, carbohydrates, and contain more potassium than bananas. Yet they are virtually fat, cholesterol and sodium free. Did we mention they are naturally sweet? If you haven’t made friends with dates, this is THE recipe to give them a fair shot. They are our (not) so secret ingredient for our energy bites and we have a feeling they will jump into your cart next shopping trip. Someone Instagram that if it actually happens- okay?

What you need:
½ cup raw cashews
15 dates - pitted
¼ cup almond butter
½ cup rolled oats
½ cup dried cranberries
2 Tbsp chia seeds
½ cup unsweetened coconut (if desired)
What to do:
Using your food processor, blend ½ cup cashews with ½ cup of rolled oats for 5-10 seconds.
Pit your dates then add directly to cashew and oat mixture.
Add other ingredients; almond butter, cranberries, and chia seeds.
Process until all ingredients are blended together and a sticky “dough” begins to appear.
Roll into small bites, and then roll in unsweetened coconut if desired.
- Energy bites are ready to be enjoyed or can be refrigerated for up to 1 week.
