Don't let the cold weather take the fresh out of your meals! This Winter Greens Salad recipe takes us to our happy place. Why? This is the salad you order when you go out to eat. Candied Pecans, blue cheese, grapefruit segments...sounds like so many steps you might skip making it at home. Say this with me, "Pinteresty food in my kitchen IS possible- without hours or complicated steps." Go time.
First, you'll want to know our favorite grapefruit trick. Watch the first 2 minutes here. Grapefruit into segments. Done.
Next, time for candied pecans. Yes, you can buy them this way... but it is SO simple we hope you will try it at home. Add pecan halves to saucepan. Toast 2 to 3 minutes over medium heat. Then add about 2 Tbsp of brown sugar & a few drops of water. Stir together and remove from heat. Let them rest.
Here are the details for the rest of your delicious salad. This makes 1 large salad or 2 smaller servings.
What you need:
- 2-3 cups of Baby Kale salad mix (Organic Girl)
- 1/2 cup supremed grapefruit segments (more if you please)
- 1/4 cup julienned red onion (about a quarter of an onion)
- 1/2 cup candied pecans
- 1 tbsp bleu cheese crumbles
- Easy balsamic vinaigrette dressing
- Salt and pepper
What to do:
1. On a large plate, spread baby kale mix or baby spinach out evenly.
2. Add grapefruit segments, red onion, and candied pecans on top of greens and distribute as evenly as possible.
3. Sprinkle bleu cheese on top of the salad.
4. Drizzle with balsamic vinaigrette and enjoy!
