Grilled Honey Lime Shrimp

The heat of Summer is here! We love it, but it can make grilling seem like a chore. Don't sweat it, try this fast marinade for a great quick meal on the grill. It's super simple to mix up and the shrimp only need to marinate 15 minutes. They can sit longer in the refrigerator if needed, but it is not necessary. Simply throw them on the skewers over med-high heat. About 3 minutes per side and that's it! 
After you pull them off, squeeze half a lime over them and sprinkle with cilantro if desired. Now enjoy your fancy, restaurant style dinner. 

What you need:

  • 1 ½ pounds of shrimp, medium-large peeled and deveined (leave tail on)
  • Juice of one large lime
  • 3 Tbsp olive oil
  • 2 Tbsp low-sodium soy sauce 
    1 Tbsp honey 
    2 cloves garlic, minced
  • Pinch of crushed red pepper (optional)
  • 1 Bunch chopped cilantro

What to do: 

  1. In a small bowl whisk together lime juice, olive oil, soy sauce, honey, garlic, and red pepper flakes. Pour into a resealable bag or bowl and add shrimp. Toss to coat and marinate for 15 minutes.
  2. Preheat the grill to medium heat. Put the shrimp on skewers and place on the grill. Grill on each side for about three minutes or until no longer pink.
  3. Sprinkle with cilantro and enjoy!
