Pro Tip: Soak corn husks in water before grilling so they don't catch on fire as easily.

Grilled Veggies
Fresh corn, zucchini, sweet potatoes & asparagus simply seasoned & grilled to perfection.

2 pounds sweet potatoes (about 2 potatoes)
- 1 to 2 pounds asparagus (1 to 2 bunches)
- 4 ears of corn
- 2 zucchini cut into spears
- Olive oil
- Salt
- Pepper
- Prepare the grill for hot, direct heat.
- While the grill is heating up, pull back corn husks and soak them in water.
- Peel the sweet potatoes and slice lengthwise, or on a diagonal, into 1/4 inch-thick pieces.
- Trim asparagus at the natural break and cut zucchini into spears.
- Coat the vegetables with olive oil and lightly sprinkle with salt and pepper.
- Once the grill is hot, lay vegetables down onto the grill grates. Cover the grill and cook until each side gets some grill marks, between 3-5 minutes for each side, asparagus may take longer depending on how hot your grill is. Enjoy!
