A flavorful fall soup with healthy healing properties.

  1. Cook onion in coconut oil in large skillet until softened.
  2. Add garlic, turmeric, ginger, cilantro and red pepper. Cook for a couple of minutes till fragrant.
  3. Add canned pumpkin, lentils and vegetable stock to pot, bring to boil and cover. Reduce to a simmer and cook for 10 min, or until lentils are soft.
  4. Add coconut milk and heat through, but do NOT boil.
  5. Just before serving, add the lime juice and salt.
  6. Tip: Depending on the saltiness of the stock you used, you may need to add more salt. Pumpkin and lentils require more salt to give them the best flavor.
