What You Need:
- 2 (6-ounce) pre-made graham cracker pie crusts
- 2 (8-ounce) packages cream cheese, at room temperature
- 1 cup powdered sugar
- 1/3 cup sour cream
- 1/3 cup Boulevard Jam Band Berry Ale
- 2 teaspoons vanilla
- 1 1/2 cup of heavy whipping cream
For Strawberry Topping:
- 1 cup sliced strawberries
- 1⁄2 cup Jam Band Berry Ale
- Zest of one lemon
- Juice of one lemon
- 1 tablespoon sugar
What to Do:
- Beat cream cheese until smooth in the bowl of a stand mixer fitted with the paddle attachment.
- Add the powdered sugar and mix until incorporated.
- Add the sour cream, Jam Band and vanilla, then mix until all become fully incorporated.
- Place in a large mixing bowl.
- Whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mixing bowl.
- Pour half the mixture into one crust and half in the other.
- Cover and chill at least four hours or overnight.
- Garnish with chocolate shavings when ready to serve.
For Strawberry Topping:
- Combine all ingredients and let sit in the fridge for at least one hour.
- Spoon over cheesecake.
Shaved chocolate is optional but makes the cheesecake extra festive!
