Healthy For You - All Aboard the Zucchini Boat!

Fast and delicious:  Zucchini boats are easy way to make a meal healthy without cutting down on flavor.  

 

These take about 15 minutes to prepare so these are great for your busy schedule!  

 



Simple preparation steps:

1.  Preheat oven to 400°

2.  Trim the ends off four large zucchini. Cut zucchini in half lengthwise and scoop out the pulp, leaving ½ in. shells.

3.  Line up the zucchini in a greased 9 x 13 inch baking dish. Chop the pulp up and set aside.

4.  Choose your topping mixture and fill your boats up! Bake uncovered for about 20 minutes or until zucchini is tender.


Here are some of our favorite mixtures to add: 

Taco Mixture:

1.  Cook 1 lb. ground beef, ground chicken or ground turkey.  Drain, add taco seasoning and the reserved zucchini pulp.  
2.  Add a four-ounce can of tomato sauce and ¼ cup of water and combine.
3.  Top with shredded cheddar cheese and bake. 

Flavor Tip: For even more flavor, add fresh lettuce, black olives, sliced avocado, crushed tortilla chips and lime juice when you pull it from the oven.

Pizza Mixture:

1.  Saute the extra zucchini and any pizza vegetables you want to choose in 1 tbsp. olive oil until tender.
2.  Add a jar of marinara sauce. Spoon zucchini sauce mixture into each boat.  
3.  Top with mozzarella and any cooked meat toppings of your choice. 

Fun Food Tip: Kids love mini pepperonis on these!

Cheeseburger and Pickle Mixture:

1.  Cook 1 lb. ground beef with ½ cup of diced red onion and 1 minced garlic clove.
2.  Add the reserved zucchini, 6 oz. tomato paste, ¼ cup of water, ¼ cup chopped dill pickles and 1 tbsp. yellow mustard.
3.  Fill you boats and top each boat with about 1 tbsp. of cheese.
