Fresh Peach Salsa

Our local harvest peaches have been absolutley FABULOUS this year. Since we aren't tired of eating them... we offer you one last fresh way to enjoy those peaches. Fresh Peach Salsa has it all. Spicy, tangy & sweet flavor that keeps you coming back for just one more bite. Try it with carnitas & fresh tortillas or keep it simple & just dip away! Lime chips or a good multigrain cracker pair well.

Ingredients:

6-8 Fresh Peaches (still slightly firm)
1 Jalapeno (only use half)
1 Red Pepper
1 Red Onion (only use half)
1 Lime
1 bunch cilantro (to taste)

What to do:

1. Slice peaches in quarters. Remove skin. Then chop peaches into bite size squares.
2. Juice Lime - add all lime juice to peaches. mix.
3. Chop Red Pepper-again try to chop into nice small squares. Add to bowl.
4. Chop Red Onion. We used 1/2 of the onion for our recipe. Add to bowl
5. Chop Cilantro-use as much as you like. We used about 1/3 bunch or 3/4 cup. Add to bowl
6. Gently mix and prepare to enjoy!

The colors in this salsa dress up any dish or party.

Summer = Popsicles. Endless flavors & shapes line the frozen food aisle begging to jump in our carts. While we must confess our love of those orginal bomb pops, they simply don't add nutritional value or keep the kids satisfied for long. As we strive to help foster new healthy habits...leaving the added sugar behind is something we hear on repeat. So what's a parent to do when the kids beg for all those different frozen treats?

Our July event - Make your own Yogurt Parfaits was so much fun! We have a blast talking with the kids and we think their parents are okay too.:)   Have your kids asked to make them again at home? We hope that our in store events will spark their interest in helping in the kitchen & learning to make some of their own snacks.
